Here’s a few things to keep in mind when making Friendsgiving Gluten Free Au Gratin Potatoes:

  1. Make sure to cut the potatoes thin enough or it will take longer to cook.
  2. If you prefer to use a different type of grated cheese, go for it!
  3. The cream cheese gives this dish a delicious creaminess, but if you want to cut back a little on this you can.
  4. The heavy whipping cream can be subbed for a plant-based version if needed, or you can reduce the quantity some as well.
  5. For the ground crackers, feel free to use any gluten free option (if needed). I love Simple Mills Rosemary & Sea Salt Almond Flour Crackers. Sprouts has these for a great price, and they go on sale frequently for an even better deal.

Ingredients

  • 2 lbs. organic russet potatoes peeled and cut into 1/4in think rounds
  • 1/2 lb. organic sharp cheddar cheese grated
  • 8 oz. Sprouts Brand Organic Cream Cheese
  • 8 fl oz. organic heavy whipping cream
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup gluten free crackers or pretzels ground
  • 1 Tbsp dried rosemary

Instructions

  • Preheat your oven to 350 degrees.
  • Grease a 9×9 baking dish, and arrange half of the potato slices on the bottom.
  • Sprinkle 1/2 of the cheddar cheese on top of the potatoes. Then, using 4oz of the cream cheese, spread small dollops of cream cheese on top of the potatoes.
  • Repeat this step with the remaining potatoes, cheddar cheese, and cream cheese.
  • Mix together the heavy whipping cream, salt, and pepper in a small bowl. Pour the mixture into the baking dish over the potatoes and cheese.
  • Bake the potatoes for 1 hour, or until they are tender and golden brown on top.
  • Remove the dish from the oven and sprinkle the cracker crumbs and rosemary on top. Return the dish to the oven and bake for 10-15 more minutes.
  • Let the dish sit for 10-15 minutes before serving. Enjoy!
