Add 1 cup pistachios to the bowl of a food processor with the S-blade in place.
Process for 10-12 minutes until you've got pistachio butter. (You may need to scrape down the sides of the bowl a couple times while this processes.)
Once done, combine the yogurt, pistachio butter, blueberries, and remaining 1/4 cup pistachios in a large bowl.
Refrigerate for 1 hour before serving. Will keep in refrigerator for up to 5 days in a sealed container.
