Spray a 9x13 baking dish with your preferred cooking oil spray and set the pan aside.
Prep your potatoes and onions as described above. Place them in a large plastic bag along with the avocado oil and Italian seasoning. Seal the bag and shake vigorously to fully coat the potatoes and onions. Set these aside along with your baking dish.
Remove the pork loin from it’s packaging and place it in your oiled 9x13 pan. Make sure the “fat cap” (the side that is white and has a large strip of fat on it) is facing up.
Using a sharp knife gently score the top of the fat cap. You don’t need to cut very deep, just enough to make a slight indentation.
Rub the minced garlic into the top of the fat cap. Then sprinkle your salt and pepper evenly over the fat cap.
Add the seasoned onions and potatoes to the sides of the pan.
Place the pan in the center of the bottom rack of your oven and cook the pork loin for 75-85 minutes or until it has reached an internal temperature of 150-160 degrees.
Remove from the oven and let it rest for five minutes before serving.
