We do a lot of things well here in Texas, but there are some things (like handling crazy cold temperatures 😳) that we are a-ok leaving up to our friends up north 👌 And growing the best-tasting apples, of course! 🍎

New York grows more varieties of apples than any other state in the country. And they average 29.5 million bushels each year 😱 New York State apples are grown on about 55,000 acres, in six major production districts around the entire state. And, there are approximately 600 commercial apple growers in New York State.
.
One of the types of apples they grow is the SnapDragon® Apple, which is exclusively grown in NY (shown here), and you can find them at @Sprouts stores across Texas now  @snapdragonapple 🙌

What’s your go-to grocery store buy that saves you a TON of time?? Rotisserie chicken is one of my favorite last minute things to grab because you can do SO much with it 🙌

Here’s how I did this bowl in 15 minutes...
1️⃣ I had the lettuce already chopped and washed from earlier in the week, but you can also just use a bagged mix
2️⃣ rotisserie chicken is 💯💯💯
3️⃣ sweet potatoes were ready from the air fryer in under 15 minutes with no active cooking time on my part and minimal clean up
4️⃣ feta and dressing for the perfect finishing touches 👌

Friendly reminder to all with diabetes: schedule those recommended yearly checkups! #ad

2020 was a weird and stressful year, yes. But, I accomplished something I’ve wanted to do since I was 12 years old…I wrote a cookbook! Getting to see the finished product arrive on my doorstep just before Christmas was one of the best feelings. I was so proud of myself. I’ve lived with diabetes for almost 30 years now and I refuse to let it hold me back, but rather choose to use it to help other people living with diabetes.

But it’s important to point out that the only reason I’m able to do this is because I do my best to stay healthy: I try to manage my blood sugars, I give myself grace, I go to therapy, and I get regular checkups…including my eye doctor. Guess what is really important when writing a book and developing recipes? Being able to see! 

February is Low Vision Awareness Month, and while it’s important to know that nearly half of people living with diabetes may develop a diabetes-related eye disease called Diabetic Retinopathy, or DR…it’s equally important to know that vision loss from DR can be preventable and treatable if caught early enough. Seeing an eye care professional yearly can help significantly lower the risk of DR complications.

Flourless Walnut Chocolate Fudge Brownies! Recipe is below!

Instead of using traditional refined flour in this recipe, the “flour” is actually ground up @CAWalnuts ! Make sure to save this post so you can find the recipe when you need it!
.
Research has shown that eating a plant-forward diet may reduce the risk of developing and dying from cardiovascular disease (CVD) by 16% and 31%, respectively. In addition, replacing refined grains (like traditional refined flour) and added sugars with nutrient-rich fruits, vegetables, nuts –including walnuts, which are high in omega-3 ALA (2.5g/oz) – seeds, whole grains, legumes and oils (such as olive oil), may help lower the risk of heart disease.

I always stock up on @CAWalnuts at my local @sprouts Farmers Market, but your local grocer will likely carry them too!  You can find walnuts in the produce department, baking aisles and sometimes snack aisle of your local supermarket. California Walnuts are available nationwide under many different brand and private label packages. A lifehack I learned is to check the packaging to make sure they’re from the USA or California to ensure you're buying California Walnuts.

Ingredients:
2 1/2 cups @CAWalnuts halves
1/2 cup oats
1 cup coconut sugar
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup oil
1/4 cup water
1/3 cup chocolate chips
 
Directions:
Add the walnuts, oats, sugar, cocoa powder, baking soda, and baking powder to the bowl of your food processor. Process for about 10 seconds until a powder forms. (You don’t want to over-do it or the oils will separate out from the walnuts.) Add in your oil and water. Process until a thick dough forms (about another 10 seconds). Carefully remove the blade and stir in your chocolate chips. Spread the dough in an 8x8 pan and bake on 350 degrees F for 20-25 minutes. Enjoy!

Truly have never been so thankful for a hot breakfast ❤️ The weather around here is improving and those of us that are fortunate enough to have power back and running water are turning our attention to how we can help our neighbors and community members that weren’t as fortunate. Only time will tell how truly tragic this week has been for Texas and this mama expects some answers and commitment for change from our public officials so this does not happen again ❤️

I rarely buy bottled water. I just don’t see the point when we usually have perfectly good water from the tap. However, it’s situations like this that remind us what a blessing and privilege it is to be able to purchase it when needed. 
.
My family lost power around 4 AM on Tuesday and later that day around 3 PM we had a busted pipe coming down through the ceiling in our bathroom… We are so fortunate we caught it when we did and were able to turn the water off. We were able to stay with family who had power and heat on Tuesday night, and got power back at our own house on Wednesday around 4 PM. We feel so incredibly blessed compared to others in our area. Even without running water right now, we have a decent supply of bottled water leftover from our hurricane kit and my husband was able to get some bottles from the store. And a big shoutout to our neighbors who are letting us fill our buckets with their pool water to flush the toilets 🙈🚽
.
So many people who don’t live in Texas have reached out asking me how they can help… And I wish I had more answers but I think many organizations are without power for so long that they haven’t been able to communicate needs… If you know of an organization that is accepting donations to directly help people in Houston and other parts of Texas, will you please leave the information below so that people can see it? To start, @houstonfoodbank  @starofhopemission @kidsmealshouston are organizations here in Houston with the direct ability to help ❤️

Yield: 2 milkshakes

Ingredients
1 1/2 cups plain 2% Greek yogurt
1oz plain cream cheese
1/2 Tbsp maple syrup
1/2 cup milk of choice
1/4 cup coconut flour
1 tsp vanilla extract
4 @CatalinaCrunch sandwich cookies (any flavor!)


Blend together the Greek yogurt, cream cheese, maple syrup, milk, coconut flour and vanilla extract in a food processor or high powered blender. Then add your @catalinacrunch cookies in and pulse for about 10 seconds. Pour your milkshake into a bowl or cup and enjoy!

’Tis the season for citrus! The delicious flavors of sumo citrus infused into this one pan salmon and veggies meal will have your whole family asking for more!

IMPORTANT QUESTION: When will you let go of the idea and guilt and unrealistic burden that you have to cook dinner every night?? When will you let yourself see that serving your family (or just yourself) a healthy meal doesn’t mean an elaborate or perfectly plated meal?? 🙅🏻‍♀️

Ladies (and men, if you’re reading this too, but I know most of you who follow me are women ☺️) in the words of Elsa, just LET IT GO 🎶🎶🎶 It’s ok to not cook dinner every night. Heck, it’s ok to not cook dinner a lot of the time. If food (and cooking) is causing you large amounts of emotional stress, give yourself a break and embrace the idea that a plate like the one above is just as nourishing as a “fully cooked” dinner ❤️ and if you are able to cook dinner every night, that’s ok too... we all do what’s best for our families and ourselves and that’s what matters ☺️
