Nothing quite says it’s summer time like okra! It’s super easy to prepare and is so tasty. You can bake it, deep fry it, and even air fry it! Okra is packed with a whole host of nutrients associated with positive health outcomes: antioxidants, vitamin C, vitamin A, magnesium, folate, and… one of my favorites for blood sugar management… fiber! Yes, I know this will ruffle some feathers, but trust me when I say, if they wanted your help or opinion, they’d ask. Making decisions about what foods to eat when you are living with diabetes is already stressful enough… Having the unwelcome opinion of others inserted in that mix can be incredibly frustrating and stressful.

It’s been one heck of a year! I was so sore after my first workout with @skyfitofficial_ last year 🥴 not gonna lie, I almost thought about not going back 😬 but here we are a year later and I’m stronger than I’ve been in a long time. Finding an exercise/activity I really love, and staying consistent with it has given me more confidence than I knew was possible 👍
