My journey to attempt the Starbucks egg bites recipe

There is a Starbucks just down the street from my kids school and it used to be my Friday tradition to stop and get come egg bites at the end of each week… but that started to add up really quickly. And then, Covid-19 hit the United States and we were in quarantine for a good 4 months. So, I became determined to figure out how to make my favorite egg bites at home.

The secret for how to make egg bites like Starbucks

I think the secret to a truly good copycat Starbucks egg bite recipe is using a mixture of several different cheeses. I even had someone who follows my account over on Instagram (who also used to work at Starbucks) tell me that she thought they used at least 4 different types in their version.

If you look on their website, you’ll see the primary ingredients listed for the Starbucks egg bites are: Cottage cheese, eggs, shredded cheeses, butter, bacon, rice starch, corn starch, salt, and vinegar. And they’re cooked in a sous vide.

I wanted to try to make a version without the rice starch and cornstarch and I wanted to be able to bake them since that is most accessible for people who read my blog 🙂

My copycat Starbucks Egg Bites have: Eggs, cottage cheese, shredded cheese, ricotta cheese, plain greek yogurt, salt, spinach, and bacon.

Are Starbucks bacon egg bites gluten free?

The Starbucks bacon egg bites are made with gluten free ingredients, but there is never a 100% guarantee when it comes to cross contamination. That’s why I love making these at home!

Are all of the Starbucks egg bites gluten free?

As I mentioned above, all of the egg bite options at Starbucks are made with gluten free ingredients, but cross contamination is a risk for people with Celiac disease. So making some copycat Starbucks egg bites at home is a great option!

How to make Starbucks egg bites at home 

I highly recommend using a silicone muffin pan or silicone liners. This will help your egg bites to not stick to your pan. I have this pan from Target and love it. I also recommend blending the eggs and cheese together to help them have a more uniform consistency.

Steamed or baked Starbucks egg bites?

I feel like you could steam these copycat Starbucks egg bites and get an equally tasty result, but I haven’t tried it. If you do, let me know how they turn out!

How to make the Starbucks egg bites recipe in your oven

Have all of your ingredients out and ready to go. 

Preheat your oven to 325°. 

Combine the following ingredients in your blender: eggs, shredded cheese, cottage cheese, ricotta cheese, Greek yogurt, salt, and pepper. Blend on low for 20 seconds. 

Grease a muffin pan thoroughly. (I recommend using a silicone pan or silicone liners if you have them.)

Fill 7 of the muffin cups halfway full with the egg mixture. Then sprinkle half the chopped bacon and spinach over each cup. Then fill each of the 7 cups to the top with the remaining egg mixture, and then sprinkle the remaining bacon and spinach on top.

*Ok, I know. 7 is a weird number for a muffin-type recipe to make but this recipe is so perfect I didn’t want to risk messing up the ratios for anything to make a different number of egg bites.

Bake your egg bites for 30 minutes. They will puff up quite large but they’ll come back down once you take them out of the oven.

Enjoy the egg bites immediately or store them in the refrigerator for up to 5 days in a sealed container. To reheat, place in the microwave on 50% power for 45 seconds.

Ingredients

  • 6 large eggs
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup low fat or full fat cottage cheese
  • ¼ cup whole milk ricotta
  • ¼ cup non-fat plain Greek yogurt
  • ¼ tsp salt
  • ¼ tsp pepper
  • 10-15 baby spinach leaves chopped
  • 3 slices cooked bacon chopped small

Instructions

    1. Hi! I haven’t tried that, but I would guess that the texture would be different when you thaw them. If you store them in an airtight container, they should last for 5-7 days in the fridge just fine.

    These were AMAZING! My boyfriend and his dad loved them too. I’ll need to make more next time so they aren’t devoured in a day! I added some sriracha on top (ironically had a Starbucks packet in the house) and it added the perfect touch :). Thanks for the great recipe!

    These are so so good! I can’t have dairy, so I subbed Kite Hill dairy free plain Greek yogurt for the yogurt and instead of ricotta and cottage cheese, I used 1/2 cup Kite Hill dairy free ricotta. I also skipped the cheddar and added nutritional yeast instead. They are amazing, and I’m so happy to be able to eat egg bites again!

  6. silly question, i want to make these now but i do not have cottage cheese. can i omit altogether or should i tweak other ingredients to compensate? thank you!

  7. These look amazing, I have a problem with eating egg unless it’s mixed into other ingredients, could I add a flour to these? If so what would you recommend ? I was just diagnosed with T2 and your sight is wonderful it’s really helped me wrap my brain around it and hopeful that I can do this. Thank you!

    Used ham instead of bacon. They turned out great. My husband is not keen on egg bites but ate three of these and gave me suggestions for other combinations so that means I’ll be making them again. Great way to increase the protein in our diet. This is a keeper.
