Pineapple Cherry Popsicles (Diabetes-Friendly)

As summer continues to heat up, cool off with these delicious diabetes-friendly pineapple cherry popsicles!

Whether we’re sitting poolside, or just looking for something sweet after dinner, it seems like a popsicle always hits the spot! With just four ingredients and no added sugar, your whole family will love my pineapple cherry popsicles!

What kind of popsicles can someone with diabetes eat?

People living with diabetes can eat a wide variety of desserts and frozen treats, including popsicles! But there are some things we can look for that make a popsicle more diabetes friendly. Ideally, we want some combination of one or more of the following:

  • Fat
  • Fiber
  • Protein
  • Less/No added sugar

Homemade diabetes popsicles

So how do we make a popsicle that has those qualities?

If we want to add more fat, we can use things like cream or nut butter in the recipe. For fiber, I love adding in chia seeds, though they do give a different texture than some people want for popsicles. And for protein, nut butter works as well or try adding in some hemp seeds or protein powder

If we want to reduce the amount of added sugar, we can rely on natural sources of sugar like fruit or fruit juice.

I also love using Truvia Stevia Sweetener in popsicle recipes for that extra bit of sweetness without the added sugar! It is perfect for these pineapple cherry popsicles.

Let’s make some pineapple cherry popsicles

Diabetes-friendly pineapple and cherry popsicles are super simple to make. First, we add cherry juice, pineapple chunks, heavy cream, and Truvia Stevia Sweetener to our blender and process it on high for about 30 seconds or until a smooth liquid has formed. (It will foam a little bit and that’s ok.) Then, just pour the popsicle mixture into your molds and place them in the freezer for one hour. After about an hour, remove the mold and insert your popsicle sticks. Then, return the mold to the freezer and continue freezing for at least 4 hours or until your popsicles are frozen solid.

What makes these pineapple cherry pops diabetes friendly?

One of the best things about my pineapple cherry popsicle recipe is that they have only about half the amount of sugar compared to other comparable popsicles on the market. 

What are the best popsicle molds?

You can use any sort of popsicle mold for this recipe, but I love this one I got off Amazon several years ago.

How to get popsicles out of the mold?

Once your pineapple cherry popsicles are frozen solid and you’re ready to enjoy them, it can sometimes be a bit frustrating to have to wait for them to thaw to get them out of the molds. To speed this process up, I like to run the bottom of the molds under running water for a few seconds. They’ll release quicker and you get to enjoy your popsicles sooner!

Equipment

Ingredients

  • 2 cups fresh pineapple chunks
  • 4 tsp Truvia Stevia Sweetener Spoonable Jar
  • 4 fl oz heavy whipping cream

Instructions
