No-Bake Lemon Cheesecake Bites

These no-bake lemon cheesecake bites are delicious and packed with protein and fiber!

Most no bake cheesecake bites require you make a crust and then a filling and then mold everything together, but not my no-bake lemon cheesecake bites! These mini cheesecake bites are super easy to prep and are ready in no time!

Easy lemon cheesecake recipe

If you’ve ever wanted to impress loved ones with an amazingly delicious snack or dessert recipe, this no bake cheesecake recipe is just what you need. It’s got only 7 ingredients, and is packed with nutrition. With 2g of protein and 2g of fiber (and only 2g of sugar) in each bite, you’ll be full and satisfied and have some pretty happy blood sugars and energy levels!

No-bake lemon cheesecake bites recipe

To make these easy lemon cheesecake bite recipe you’re going to need a food processor or high powered blender and that’s it! 

First, add your coconut flour and oats to the bowl of a large food processor (or blender) and process until a fine powder is formed (about 30-45 seconds). 

Add the remaining ingredients (cream cheese, maple syrup, vanilla extract, almond extract, and lemon zest) to the food processor and process until smooth. 

Using a small cookie scoop, scoop the batter onto a parchment lined pan or container. Sprinkle the bites with additional lemon zest and/or shredded coconut if desired. 

Refrigerate the mini cheesecake bites for 2-4 hours to allow them to harden. And enjoy! 

You can store your No-Bake Lemon Cheesecake Bites in the fridge in a sealed container for up to 2 weeks. Or freeze for up to 3 months.

Alternative no-bake cheesecake bite ideas

If you want to play around with other flavor options, you can try adding in some frozen blueberries (add additional coconut flour to absorb the extra liquid), maybe some cinnamon, or even some cocoa powder or chocolate chips!

  1. Could you add lemon juice to add more lemon flavor? If so, I’m sure that would affect the sugar, so would you then need to adjust other things like the syrup or oat/coconut flour amounts?

  3. Can I freeze any of your no-bake desserts. I like making things ahead and freezing them so that when I have a snack attack they’re ready. All of your no-bake desserts look wonderful.
