Christmas Spice Energy Bites

These Christmas Bites have a great spice flavor. This recipe makes 18 mini bites or 9 Larabar sized bites.

1 cup raw cashews
1/2 cup raw slivered almonds
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
1/4 tsp salt
1/2 tsp vanilla
8oz. dates, pitted
1/4 cup dried cranberries
2 Tbsp pumpkin purée

In a large food processor, blend the first seven ingredients until they form a powder (about 30 seconds). Add the remaining ingredients, and blend until the dough starts to ball up (about 2-3 minutes). When it’s done, it will look like this picture. Line a baking sheet with wax paper and shape dough into balls. Refrigerate for at least one hour and then transfer them to an airtight container. Keep refrigerated.
