Cinnamon Thieves Energy Bites

This recipe is an oily version of my no-bake Christmas Bites.

1 cup raw cashews
1/2 cup slivered almonds
1/4 tsp salt
1 cup pitted dates, firmly pressed
1/4 cup raisins
1/4 dried cranberries
1/2 tsp vanilla extract
Young Living essential oils: 2 drops Cinnamon Bark and 1 drop Thieves

In a large food processor using the S-blade, process first 3 ingredients until they form a powder (about 20 seconds). Add all remaining ingredients including essential oils. Process until the dough balls up (about 60-90 seconds). Using a Tbsp measure, scoop dough and roll into balls. Place on a baking sheet lined with wax paper. Refrigerate for one hour. Transfer to an air tight container. Can be stored in air tight container in the refrigerator for up to 2 weeks. Enjoy! (Makes about 20 “bites.” 1 bite = about 1/2 Larabar or Kind bar)
