Cranberry Coconut Energy Bites

1 cup raw cashews

1/2 cup slivered almonds

2/3 cup unsweetened shredded coconut

1/2 tsp sea salt

1/2 cup dried cranberries

1 1/2 cup dates, pitted, tightly packed

Combine the first 4 ingredients in a food processor. Pulse until a powder forms (about 30 seconds). Add remaining ingredients and process until a dough begins to form and balls up (about 2-3 minutes). Shape into balls, and refrigerate for at least one hour before placing into a sealed container. Energy bites will keep for up to 2 weeks.
