with toasted almonds and coconut
3 large sweet potatoes, cooked, skin on
2 Tbsp Chosen Foods Avocado Oil
2 Tbsp pure maple syrup
1/4 cup unsweetened vanilla almond milk
1/4 cup unsweetened shredded coconut, toasted
1/4 cup toasted slivered almonds
Combine all ingredients, except almonds and coconut, in the bowl of a stand mixer. Using whisk attachment, mix for 2-3 minutes. Mix coconut and almonds in by hand, reserving some for topping if desired.
