3 Tbsp oil
1 white onion, chopped
12oz. frozen peas and carrots
1 Tbsp teriyaki sauce*
2 cloves garlic, minced
2 eggs
4 -5 cups cooked brown rice
1 pound cooked ground chicken, turkey, or beef
2 Tbsp soy sauce*
*If making gluten free, be sure to use gluten free sauces.
Heat oil in a large skillet on medium heat. Add onion, peas and carrots, and teriyaki sauce. Let heat until tender, about 10-15 minutes. Add garlic and sauté another 5 minutes. Crack eggs into pan and scramble, mixing throughout vegetables. Add meat and 1 Tbsp soy sauce to pan. Stir. Add cooked rice and other 1 Tbsp soy sauce. Stir to combine. Continue to cook until heated through.
